    Hi, I hope we can resurrect this group, I'd like to share some recipes and learn other new ones!

    My special issue is that I am allergic to wheat and if I eat it I get deathly ill and folks call the ambulence... keeping that in mind, does anyone have any recipes that do not contain wheat?
    sk, enjoys soup, cookies, stews, baked goods and cassaroles, but not bread!

    Merry Catholic is looking for a lasagna recipe. Mine isn't really like the lasagna I've had elsewhere - it has more cheese and less sauce.
    About 1lb ground beef
    A box of lasagna noodles
    1 lb. mozzarella
    1lb. provolone
    1 container Ricotta
    1 can of parmesan
    1 Jar of spaghetti sauce
    Brown the meat with some garlic. Add the sauce and keep it warm.
    Boil the noodles until soft - you need about 12 but cook more because some will tear.
    Drain the noodles.
    Slice the provolone and mozzarella into 1/8-1/4 inch slices.
    In a large baking pan build the lasagna:
    spread some of the meat sauce on the bottom.
    Set 3-4 noodles down overlapping just at the edges
    sprinkle on parmesan
    add slices of mozzarella and provolone and scoop in some Ricotta to cover the noodles. Cover with more of the sauce. Add the next layer of noodles and repeat, finishing with a layer of noodles covered with sauce.
    Cook at 350F for about 45-50 min.

    Now that I am retired I have found that I love to bake bread. I bought a Bread Machine because it is designed to turn out a perfect loaf every time. One of the breads that I love to make is Swiss Zopf. Set crust on medium and use the basic cycle.

    1/2 cup of Milk
    1/3 cup of water
    1 large egg
    2 Tbs. unsalted butter, cut into pieces

    3 cups of bread mechine flour
    1 tbs gluten
    1 tbs sugar
    1 1/2 tsp salt

    2 1/2 tsp bread machine yeast

    It is best to bake the bread on days with low humidity.
    You may have to add a few tsp of water if the ball of
    dough is dry. Enjoy

    What is going on in the grocery stores? Yesterday I wanted to make succotash and I had just a terrible time finding yellow squash, of all things. And lima beans? No frozen ones and only one small can on the shelves!
    So - here is how I do it.
    fry six pieces of bacon - leave the drippings in the pan.
    Slice up 1 and a half zucchini and 1 and a half yellow squash and saute them until limp in the bacon drippings. Add a can of corn and a can of lima beans and a can of cut okra. cut up the bacon and add it back in. Cook it over a medium low heat for 20 minutes.

    So many folks do not like kraut because they don't know that it is much more palatable if you wash(rinse) it under tap water. Stir fry i with butter and onions. Awesome!

    One dish I make that I can make in quantity and freeze is lasagna! There are probably as many ways to make it as there are cooks but here is what I do.
    You will need 2 cans of spaghetti sauce
    1 lb. of hamburger
    12-16 lasagna noodles
    1-2 lbs mozzarella
    1 lb. provolone
    1 container ricotta
    parmesan cheese
    Brown the hamburger, drain the fat and add the cans of sauce and simmer. Boil the noodles. Slice the cheese. When the noodles are tender, drain them.
    In a large baking pan spread a thin layer of the meat sauce. place 3-4 noodles, overlapping, in the pan. Spread sauce on them and add slices of mozzarella, provolone, dollops of ricotta and sprinkle it all over with parmesan. Then add the next layer of noodles and repeat the process. The last layer is a layer of noodles covered with sauce. Bake it at 375 for 40-45 minutes. When you take it out let it sit a few minutes before cutting it into serving squares. This makes enough that I usually use half for dinner and lunches and freeze half for another night. My son loves it almost as much as pizza and asks for it if I haven't made it in a while.

    And the angel food cake dessert can be made with chocolate pudding too. It's truly delicious, and all adults who have tried it have loved it.
    There's more to life than feeding kids--there's all the rest of us!

    my kids learned to like sauerkraut. I have a recipe for ribs and kraut that is made in a pressure cooker. I get Vlasic or whatever and the recipe calls for a bit of brown sugar so that takes care of the sourness right there. The recipe is in the presto pressure cooker booklet.
