At last, I have finished with this season's canning projects. Here are the results:
Here is what I have harvessted, so far from my garden this year: 52 pounds of tomatoes (more green tomatoes on the vine.) 37 pounds of cucumbers 12 pounds of carrots (another 5 pounds or so still in the ground) 3 quarts of strawberries 2-1/2 pounds of basil 1 pound of oregano 12 ounces of thyme In addition, my mom brought home four flats of blueberries, and one flat each of blackberries and raspberries which were being given away at the local senior center. I also bought some peaches. Here are the canning results: Berry Jam (no sugar added): 14 pints 21 12 oz. jars 2 20 oz. jars Tomato Sauce (no salt) 4 pints 1 12 oz. jar Stewed Tomatoes (no salt) 7 12 oz. jars. Pasta sauce (low salt) 3 qt. 5 20 oz. jars Peaches 6 pt. Pickled carrots (low salt) 1 qt. 8 pt. Dill Pickles (low salt and sugar) 10 qt. Sweet/Bread and Butter pickles (low salt and sugar) 9 qt. 2 pt. 1 12 oz. Total number of jars canned, 94 |
