Default (Almost) Homemade Chicken Soup

I call it "Almost" because I use a rotisserie chicken instead of raw (makes a lot of the flavor!) and some canned chicken broth too. I'm sorry if some of the ingredients aren't exact (like a 'handful'), because I just eye it, having cooked it so many times, and it won't hurt if it's a bit more or less.

And I do this all in the crock pot!

INGREDIENTS:
1 rotisserie chicken (cooked, from the grocery store)
1 big can of chicken broth (low sodium if you want)
1 large onion
2 stalks of celery
3 carrots
1 TB Lowry's Seasoned Salt
a handful of fresh parsley
a pinch of red pepper flakes
1 bag of noodles (I use egg noodles or kluski noodles)

I first pick the chicken, putting the skin and bones into the crock pot and the meat aside. Pour the canned broth into the crock pot and let that all cook on high for 2 hours. Now and then I do add some water to this mixture if it doesn't look like enough broth for the chicken I've bought (I'll fill half the empty can of broth with water and add it). Then strain out the skin and bones, saving the broth you've just made. Put that back in the crock pot, and add the reserved chicken meat. Fry the chopped onion and celery in veg. oil until tender, and add. Chop up the carrots and parsley and add those, and the Seasoned Salt, and the tiny pinch of red pepper (it gives it a teeny kick, barely any, which I enjoy). If you're in a hurry, you can keep the soup on high just until the carrots are tender (probably an hour) or let it simmer on low for hours till you're ready to eat! You can add the noodles right in if you like, but I find they soak up too much of the soup if cooked too long in it, so my DH likes me to boil the noodles separately and serve the soup over them. Then I just throw it all together to save leftovers.

Mrs. Ruby Mrs. Ruby...

I owe 'celery' now as a part of my daughters diet thanks to you!!! I'm in the process of making dinner...and I had the celery out on the counter...and I gave it to her when she was younger but she wouldnt go NEAR it...lol...but she seen it, asked what it was, and I played it off like it was some brand new kinda thing...gave it to her cut up with a scoop of peanut butter so she could dip it...

she's already dusted 2 stalks!! lol.... and to think I would have probably never tried again and chalked it up as one of those things she just wont eat... THANK YOU!
