I can see that would make this not correct would be that all people are not called to this Sacrament. I further do not understand how grace is

But, from what I have seen, such a list (if it existed) would be VERY short.
One reason why I am sure that no such list will ever be published is because it would be widely (almost universally) misunderstood. If some Apostolic Constitution by Pope Miscellaneous did not appear on the list, people would think that means it was not infallibly promulgated. But, the thing is - this could very well be infallibly promulgated - but simply not (yet) designated as such. The Church could make this designation at any time. (something like this happened with JP2's Ordinatio Sacerdotalis, which was formally defined as infallible more than a year after its publication).
The Church has never been particularly anxious to define some teaching as infallible. The designation is of interest only to theologians and academics in very limited fields of study. It is completely irrelevant to everyone else.

It's actually more times than one thinks (all emphasis mine)
here's 2 explanations

This triggers the Church’s gift of infallibility, which Vatican I teaches “the divine Redeemer willed his Church to enjoy in defining doctrine concerning faith or morals” (source). Consequently, the verb “define” has come to be used as a trigger word for infallible papal statements. If you see a pope say “we define” or “I define,” it is a signal that he is making a definition and thus exercising the Church’s gift of infallibility.
