An older man said pretty much the same thing to my daughter this weekend. I don't think my daughter heard him and I just smirked at him and walked passed him. I don't have a problem engaging people on important issues but sometimes you just get a sense that it wouldn't be worth it and its better to just leave it alone. There are lots of well meaning confused people in this world.

From my experience, it is the best to say instantly that this statement is wrong because...
Like here you should have said something like: No that is impossible because it is an unchangeable teaching.
Usually the response is a yes your are right or a nice and polite discussion.

In the moment (or if one talks to the person later), one can ask simply, "Why are you telling her that?"
After whatever response comes, you can say, "Well, Rome is not saying that, and Rome has made it clear that the matter isn't a matter of will, but a matter of ability. It cannot be done. In any case, I'll thank you not to teach my child to question Rome's authority. That is way out of bounds."
After that, keep the conversation on your insistence that no one has the permission to teach your child to question teachings of the Church. Period. Whatever else they may think, you are the primary educator of your child, and on that ground you may insist that this not be done again.
Whatever you do, avoid useless arguments that involve predicting the future, because almost no one ever changes their minds during those disputes. They feed strife, and nothing else. There is more to this, after all, than merely being right.

Way to go for instructed your daughter in the truth!  Perhaps a bit of an educational chat might be in order for the woman next time she says something like that. Maybe she really doesn't know that women are not going to be priests in the Catholic Church? I have a dear older family friend who was born and raised Catholic and I found out after taking my RCIA classes and being confirmed, I would talk to her about things I'd learned and found out that there was a LOT about the Catholic faith she honestly did not know!

Or do I let it go, be aware in future conversations (and say something if it happens again), and continue to teach my children the faith?

Don't get me started on this topic.
My husband and I attended a church this last Sunday that is apparently a "progressive" church. We were told that last year a group of women boycotted the Eucharist and held a protest outside of the church because they wanted women priests. My husband and I were horrified.

Yes, they did that in 2010 and 2011....deciding that the best way to boycott the Church was to refuse to worship, they skipped their Sunday obligation, and went to a protest to get themselves into the newspaper, instead. At least there was no liturgical dancing that Sunday, but that is a small consolation in return for a show of strife like that. (Well, noneduring Mass. There was liturgical dancing at the protests, apparently.)
That's how secular people operate in the secular world. It is a disgrace for Christians to act in such a manner, and it betrays a vast ingratitude for the Eucharist, IMHO.

What kind of Catholic sets up a picket line between the faithful and the Mass? I'd cross such a picket line without a thought. Honestly, I might go to Mass a 2nd time the same day just in order to calmly and yet publicly cross it. They need the prayers, and they need for these foolish tantrums of division to have the opposite of the effect intended. Maybe if they get less than nowhere with this kind of thing, they'll cut it out.

All they did was make themselves look silly and their behavior wasn't very Christ-like.

Allegra - There is no reason to believe that this woman was making a joke. I wasn't there, I've never met the lady, but I can smell the dissent and I can smell the lady's hatred for the Church. She was planting little weed seeds in the young child's mind.

I am surprised that I have got surprise at my answer.
The situation is so surreal that to a stupid situation you can only answer with a stupid answer.
I mean to tell to a 8 year old that she may become a priest someday is so outlandish that I had to tell anything but answer it seriously !
That is not a talk to tell a 8 year old. Period. The woman needs some kind of treatment.
If this girl was my daughter, I would answer exactly as I did: "Honey, never become a priest! It is enough all the troubles you will have as a woman to add the troubles of a priest!".. Sorry I cannot convey my tone of voice but I would have a lot of fun with my girl on that situation ...
My dealing with situations like these: either you cry or you laugh. Better laugh...
