The reason there is a lack of canonized saints as compared to those who went into religious life, is that people who entered religious life had their lives documented, which helped in the canonization process.
Lay people, for the most part, are unheard of, yet still lead lives of holiness.

There is a great book I read called Saints Behaving Badly. It shows you that anybody can become a saint.

St Catherine of Siena was a third order Dominican.
We are all called to holiness.

I think St Rose of Lima was a Third Order Dominican too.
St Monica, mother of St Augustine. St Therese of Lisieux's parents (Zelie and Louis Martin) are both Blesseds. As is Blessed Matt Talbot.
A great favourite of mine is St Thomas More.

Interestingly enough (at least to me  ): both St Thomas More and St Frances of Rome (another layperson, BTW) are claimed by both the OFS and the Bennies.
