I also recommend saying a traditional Office in Latin, if you're drawn to that practice. I do and besides being a great meditation on the psalms, it is expanding my vocabulary with the repetition of the same prayers each week. You could say the modern LOTH in Latin, too but its four-week cycle won't drill in the language like the old one-week does.

If you want to study Latin beyond just being able to make understand the text of the liturgy, you might check out the Henle textbook series. It is quite good and with the unique benefit of having also a Catholic focus rather than just Classical.

I'm an amateur at best with Latin. But, I've had a desire to learn a little here and there... I started with downloading MP3's of the ordinary in the Latin Mass. Listening to the chants (and singing along) really helped me to pick that up quickly. (I have an hour drive to work everyday, so it was a perfect place to do it)

Also, I've been praying the (traditional) divine office in Latin. As the previous poster stated, it really drills the vocabulary. Also, doing that has helped me with pronunciation.
