I would have to be the patron saint of either:
* messy room/homes
* unfinished business/homework

I'd probably be the patron of the misunderstood. Then again, I think there's probably many saints that have already beat me to it. So I guess that means I'll be in really good company.

Patron saint of undertaking more than he can possibly ever get done, but being incapable of realizing it until something or other goes totally awry, then, having dealt with that immediate crisis, undertakes yet another thing to which he can't possibly do justice.
(Kind of a limited patronage, I would say. I don't think I would be on any medals.)

The Patron Saint of People Who Forget to Set Their Alarm Clocks Correctly
You know...you meant to wake up at 7:00 am but you accidentally set your alarm for 7:00 pm. I'd interceed for people without their prayers by being that strange urge they feel to check their clocks at some strange time like 7:16 am and realize they set their alarm wrong so that they don't miss class.
My icon/stained class window of me would be as a college student wearing yesterday's clothes and apply FeBreze to them since there is no time for a proper shower due to oversleeping.

Hehe - I feel your pain. Shame there's nothing that works quite so well on human BO as Febreze does on smelly clothes. Especially in summer.
