Twice Baked Fake Potatoes
![]() (use one baking dish for everything) - 1 bag of frozen cauliflower, thawed and chopped. (can use fresh. Just eyeball the amount to the frozen amount, cook same way, just add a little water). - 8 oz of full fat softened cream cheese. - 8 oz of shredded cheddar.( Shred some extra if you want to add on top). - 2 to 3 scallion onions, sliced thin. - 5 slices of cooked, crumbled bacon , or 1 big handful of Real bacon Bits (don't use immitation). - salt and pepper. - Optional ( can cover top with full fat sour cream if desired). - Paprika. - Spray cooking spray into small microwavable baking dish. Microwave the cauliflower for 13 min. Drain cauliflower well. In same baking dish, add cheeses. Mash and mix them all well. Mix in scallions and bacon, and mix well. - Smooth it all out in the same dish. Add the extra cheese (and sour cream over the top if adding). Sprinkle the top with paprika. Bake in pre-heated oven at 350 for 20 to 40 min until golden brown and bubbly. This recipie serves approx. 4 people, and has approx. 6 carbs per serving. Can very easily double this recipie, just use a 9x13 inch pan.

Fake "Hamburger Helper"
![]() - 10 to 12 slices American cheese, or slice equivelant in Cheddar cheese. - 2 cups of heavy cream. - 8 oz .of full fat cream cheese. - 12 to 16 oz. of canned sliced mushrooms, or slice 12 fresh mushrooms. - 2 lbs. of ground beef. - 1/4 cup diced onion. - 16 or so slices of sugar free bacon, cut into 1/2 inch, or so, pieces. - Add salt, pepper, California style garlic powder to taste. - Chopped fresh Italian parsley. In a sauce pan, mix heavy cream, cream cheese, American, or Ceddar cheese, and cook on low to medium heat. In seperate pan, brown ground beef, onion, and mushrooms, add salt, pepper and garlic, Drain, and set aside. Fry bacon, drain and set aside. Put ground beef mixture into your serving bowl and pour cheese mixture over it. Add bacon pieces and parsley on top. Can serve over steamed broccoli for low carb, or egg noodles or rice for those not on low carb. Serves approx. 4 people. Has aprrox. 6 carbs per serving.

CABBAGE AUGRATIN
![]() - 4 cups shredded cabbage. - 1/4 cup sliced green onions. - 1 cup liquid whipping cream, or can use Half & Half (it will not be as thick). - 2 eggs. - 1 cup shredded Swiss cheese (or can use Cheddar, Colby, Jack, or mix them 1/2 & 1/2). - 1 teaspoon ground mustard (dry, in can). - 1 teaspoon of salt and pepper. - crumbled bacon (optional, but good!). - 1/2 cup grated Parmesan cheese. - 2 Tablespoons chopped fresh Italian parsley.(flat leaf kind). - Mix cabbage, eggs, onions, whipping cream, mustard, salt, pepper, swiss cheese, and bacon (if using) in mixing bowl. Pour mixture into greased baking dish and sprinkle top with the Parmesan and parsley. Bake at 425 for approx. 20 -40 min. (depending on pan depth. You want top to have a little color). Number of Servings: 4, approx. 4 carbs per serving.
