Brunch ideas?
Does anyone have any suggestions for brunch food? I want to keep things simple and serve something that everyone will like. As a member of Nescafe Tasters, I thank you!

How about a frittata? Not as easy to screw up as an omelet and very yummy. Plus it's versatile in terms of ingredients and it can be served warm, room temperature or cold.

I second the frittata idea. I like mine with tomatoes, fresh spinach, basil and mozzarella cheese...it's very fresh tasting, like an insalata caprese. You can also add turkey sausage if you want some meat. It's delicious with a small green salad on the side with vinaigrette. Also, it seems fancy but is super easy to make

Strata, too. It's like fancy savory French toast in a casserole. You can make it the night before and just pop in the oven.

Santa Fe Salmon Corn Chowder With Cheese Quesadillas - 6 Servings

NUTRITIONAL INFORMATION
• 1 serving: Calories 778; Carbohydrates 56g; Fat 50g
INGREDIENTS
• Chowder:
• 3 slices bacon, cut crosswise into strips
• 1 cup chopped sweet onion
• 1 lb Yukon Gold potatoes, in 1/4-inch cubes
• 11 /2 tsp each ground turmeric and cumin
• 1/2 tsp chili powder
• 2 (141/2 oz) cans chicken broth plus
• 1 can water
• 2 cups fresh corn kernels (reserve cobs)
• 1 cup heavy cream
• 1 lb skinless salmon fi llets, cut into 1-inch chunks
• 2 jalapeo chiles, sliced into rounds and seeded
• 1 tsp kosher salt
• 1/2 cup torn cilantro leaves
• Cheese Quesadillas:
• 6 (8 inch) whole-wheat-fl our tortillas
• 3 cups shredded pepper-jack cheese
• 3 Tbsp vegetable oil
DIRECTIONS
• 1. Chowder: In a large saucepan over medium heat, cook bacon until crisp; remove bacon with a slotted spoon to paper towel to drain. Add onion to drippings and cook until softened, about 4 minutes. Stir in potatoes, turmeric, cumin, and chili powder. Add broth, water, corn kernels, and reserved cobs; bring to a boil. Reduce heat to low, cover, and simmer 8 minutes, or until potatoes are just barely tender. Discard corncobs
• 2. Stir in cream; add salmon, chiles, and salt. Reduce heat to low and cook 3 minutes, gently stirring once, or until salmon is almost cooked through. Turn off heat, cover pot, and let stand while making quesadillas.
• 3. Quesadillas: Place 3 tortillas on a work surface and top each with 1 cup cheese; cover with remaining tortillas. Heat 1 Tbsp oil in each of 2 large skillets over medium heat until shimmering. Add a quesadilla to each skillet. Fry until puffed and golden on bottom, about 1 minute. Press quesadillas down with a spatula, flip over, and fry remaining side for another minute, or until crisp and cheese is melted. Drain on paper towels. Fry remaining quesadilla. Cut each into 6 wedges.
• 4. Ladle soup into 6 soup bowls. Top with bacon and cilantro leaves. Serve with quesadillas.

how about grilled cheese sandwiches.., or fried egg on toast...or bagels with whatever fillings you like..or a cooked breakfast is a filling meal and could work as brunch

Brazilian Lemonade - 4 Servings
This recipe for 'lemonade' actually uses limes and has the additional sweetness of sweetened condensed milk. Best served immediately.

INGREDIENTS
• 2 limes
• 1/2 cup sugar
• 3 tablespoons sweetened condensed milk
• 3 cups water
• ice
DIRECTIONS
• Wash limes thoroughly. Cut off the ends and slice into eight wedges. Place limes in a blender with the sugar, sweetened condensed milk, water, and ice.
• Blend in an electric blender, pulsing 5 times. Strain through a fine mesh strainer to remove rinds. Serve over ice.

Speaking of grilled cheese, has everyone seen the utterly ridiculous eggs-in-a-hole grilled cheese? It has been going around the internet lately. I made one for dinner the other night and boy was it good. Not sure how practical it would be to make a lot for a brunch; maybe if you had a giant griddle pan.
Essentially you make two eggs-in-a-hole (cut a hole in a piece of bread; put the bread on the pan, with butter, and toast momentarily; crack an egg into each hole and cook until it sets enough; flip!), and after you flip the first time you put cheese on one of the pieces. Then you put it all together and ideally you have runny yolk grilled cheese. Not something to eat every day but certainly worth a try at least once.
I thought to do one with, say, Boursin type cheese and smoked salmon in the middle; or apples, cheddar and bacon.

As far as I go, all sorts of Italian-style sandwiches are great. Pancakes could be. Or sweet buns with coffee. Or eggs fried with bacon or sausage slices. Or Greek or Caesar or similar salad, I guess.
