Candle during communion at EF Mass

I have heard that in some European countries there is the practice of the altar server lighting a candle at a certain point of the EF Mass and then taking it with him when the priest is distributing communion. I know here in Portugal we had that practice but I am not sure exactly at what point during the Mass the candle is lit (the priest is also uncertain). Can anyone help please?

When we celebrate a Missa Cantata or Solemn High Mass there is an altar boy with lighted candle at each end of the altar rail. I suspect they don’t follow along with the priest to reduce the chance of getting in the way of the paten holder or priest. My head is usually bowed prior to communion so I haven’t noticed when they are lit.
