It seems like the willful act of ignoring the authority of the Church is the big kicker and is the cause for the grave sin, even in regards to mere discipline. I would suspect that this would surely need to be confessed to receive absolution, correct?
Not eating meat on Fridays during Lent is not an option. It is an obligation. Eating meat therefore is a sin of grave matter and if a person knows that then they are committing a mortal sin.
