If God knows everything, why He planned earth's repopulation through Noah?

It is said that at the time of Noah the world was very corrupted by sin. So God’s plan was to eliminate everyone except for the just Noah and his family. But God surely knew the future of humankind after Noah, He knew that the world would be again corrupted. That said, why the Bible makes this “humanistic” image of God?

You have it backward. The bible delineates how we are made in the image and likeness of God.
