Why do we offer up Mass in honour of a saint?

If you read the prayers for the day, you’ll see that we are thanking God for giving us such a beautiful example of the faith. For example, the opening prayer for the feast of St Stephen is:

Lord, today we celebrate the entrance of Saint Stephen into eternal glory.
He died praying for those who killed him.
Help us to imitate his goodness and to love our enemies.
We ask this through our Lord Jesus Christ…
