The Feast of First Fruits

In Leviticus 23:11 we are told the feast of first fruits will be held the day after the Sabbath. However, around the 1st century A.D. it was changed to the 16th day of Nisan.

In the Jewish Encyclopaedia found here its claimed this was so “in order to emphasize dissent from the Sadducean interpretation of the Scripture text” but we are not told why they disagree with them.

I would like to ask from a Jewish perspective how they interpreted Leviticus 23:11 “the morrow after the Sabbath” to mean the 16th day of Nisan?
