What does Jesus mean when he talks about tradition?

There are certain passages in the Bible where Jesus is criticizing the Pharisees and their traditions. In Protestantism, these verses were often shown to me to demonstrate how Catholics are wrong because they cling to their “man-made traditions” just like the Pharisees did in biblical times. How would a Catholic respond to this Protestant claim and what does Jesus mean when he talks about tradition?
