What does the Church say about evolution and the Soul?

Given the the weight of scientific evidence supporting evolution by natural selection, which seems to rule out a literal Adam and Eve, how do we explain the idea of the soul? When was the human soul created? Furthermore, what does this say about Original Sin? Is it a literal sin, or “the human condition”?
