What happens when a Catholic marries a Greek Orthodox?

My son is seriously dating a young woman who is a devout member of the Greek Orthodox church and they have discussed marriage. He is a devout Catholic and thinks they can each practice their respective religions and allow any children born of this marriage to be baptised in the religion of their choice upon reaching adulthood. Can you explain what impact this course of action would have on their participation in their respective religions and the impact this would have especially on their children.
