What is the church’s stand on dinosaurs?

What is the church’s’ stand on dinosaurs and how the earth is so old but we don’t know how humans were not here during the same time as dinosaurs? were we all not created in 7 days? I don’t believe in Evolution but I thought that Adam went and was looking at all the animals and realized that he didn’t have a match. So Eve was created from Adams thoughts because God saw that Adam was lonely. when they pull up fossils from when the dinosaurs were around why don’t they find humans? I am a Baptist but am looking at Catholicism so im not picking a fight just wondering. thank you
