Why is Easter the holiest of all days?


I’m a practicing cradle Catholic. I’m trying to answer a protestant friend and want to make to sure I am accurate in my words.
Why is Easter the Holiest of all Holy days for us in our Catholic faith?
Quoting her; “because we celebrate His death every Sunday. We don’t do much for/on Easter” I became lost for words. I wanted to say – “because of what you Just said; We’re remembering His price He paid for our sins” But I’d appreciate a bit more help, if you could /would be so kind.
